Thyme is a great herb to cook with because it is highly aromatic and hence delivers a lot of delicious flavour and taste. The leaves of most common varieties, are a type of evergreen hence its smell for me is reminiscent of a walk through the woods and cottage. In this recipe do not use the stem just the leaves, most stems are woody and tough, however they are good to throw into a broth to add extra flavour. SERVES 4
1 tsp of olive oil
Preheat your oven to 350 degrees F.
