Steamed Spinach with Garlic and Sweet Onion

This is a quick weekday recipe for a side dish, it’s very tasty, relatively low in fat and high in nutritional values. For this reason I like to provide a large servings of this side dish.

SERVES 2

INGREDIENTS

1  tbsp olive oil
1  small Spanish onion, thinly sliced
4  garlic cloves, minced
10 oz. baby spinach (284g), pre-packaged bag
    pinch of salt and freshly ground black pepper

 

To a large pan on medium heat add olive oil, onion and garlic. Add a pinch of salt and freshly ground black pepper. Sauté for 5 minutes until the onion is translucent.

Add spinach, put a lid on the pan and turn down the heat to medium-low. Although the spinach may appear too full to fit in the pan, it will reduce in size. After 1 minute check on the mixture and stir, season with pepper and let it cook for another minute.

Take it off the heat and serve.

 

TIP DU JOUR:
If you would like to reduce the amount of oil in this recipe, add one teaspoon of oil and a few tablespoon of chicken stock to soften the onion and cook the garlic.
