Mussels with Green Beans

Mussels are great food of the sea that you can add to your regular dinner routine. A serving of mussels is approximately 3 ounces or 85 grams of actual mussels meat. It contains 146 calories, 3.8 grams of total fat and 20 grams of protein. It is not a source of omega-3 fatty acids but it is an excellent source of Vitamin B12 and Selenium. Mussels with green beans, so good!!

SERVES 4

INGREDIENTS

2  pounds of mussels (approximately 1 kg)
1  tbsp of olive oil
1  red onion, roughly chopped
3  garlic cloves, chopped
1  pinch of red hot pepper flakes
2  tbsp of fresh ginger, minced
1  tbsp of lemon grass
1½ cup of vegetable or chicken stock, sodium reduced
½ pound of green beans, trimmed
    salt and freshly ground pepper
 

Heat a large pan, add oil, onion, garlic and a pinch of salt and pepper. Turn the heat to medium-low and stir frequently until the onion softens, approximately 3-4 minutes.

Add the red chili flakes, ginger, and lemon grass. Cook for 1 minute. Add stock to the pan and wait until it comes to a boil.

Add mussels gently to the pan, make sure they are not over crowded. Now place the green beans on top, cover the pot with a lid and wait until the mussels open up, approximately 5 minutes.

Transfer the green beans and mussels to individual dishes and serve. Enjoy!!

TIP DU JOUR:
Mussels don’t open up well when they are crowded. So use the largest pan you have when making this dish. If you think they will still not have enough room, make the mussels in two batches.
