Mussels in White Wine with Basil

I love this recipe, it takes minutes to make and it sparkles with delicious tastes and freshness. Drink it with the wine that you are using to steam the mussels, it will further bring out the flavours of this dish.

SERVES 2-4

INGREDIENTS

1  tbsp olive oil
2  shallots, minced
2  lbs mussels, clean and drained
˝ white wine, your favorite
˝ lemons juice
1  lemons zest
4  basil leaves, sliced into thin strips
    salt and freshly ground pepper
 

Heat a large pot over medium heat. Add olive oil and shallots. Add a dash of salt and pepper and sauté for 2 minutes.

Add mussels, wine and lemon juice. Put a lid on the pot and cook for 5-7 minutes peaking in and stirring gently mussels every few minutes. When they are open they are ready to serve. Don't over cook.

Serve mussels in bowls, sprinkle lemon zest and basil. Add crusty baguette bread to absorb the delicious broth. Enjoy!!
