Mint Flavored Vegetables

This is such a great side dish, light, crisp and so delicious. I love the subtle mint flavours, try it and you will love it too. In addition it takes only minutes to make. You can quickly change it to a main course, just add shrimp and serve it on a bed of basmati rice.

 

SERVES 2-4

INGREDIENTS

1  tbsp olive oil
˝ red onion, roughly chopped
1  red pepper, small and roughly chopped
1  yellow pepper, small and roughly chopped
1  orange pepper, small and roughly chopped
˝ lb asparagus, chopped in half
2  tbsp vegetable or chicken stock
9  cherry tomatoes, cut in half
4  mint leaves, thinly sliced
2  tbsp Italian parsley, thinly sliced
    salt and freshly ground pepper

 

Heat a large pot over medium heat. Add olive oil and red onion. Add a dash of salt and pepper and sauté for 4 minutes.

Add red, yellow, and orange peppers, asparagus and chicken stock. Sauté for 2 minutes, add tomatoes. Cook for 2 minutes. Add and incorporate mint and parsley and serve.
