This is a
delicious salad and takes very little time to assemble. The sweetness of
the mango delicious complement the spiciness of the hot pepper. You will
love to make this again and again.
SERVES 6-8
INGREDIENTS
2 chicken breasts,
grilled and cut into cubes
1 cup of seedless grapes, cut into half
¼ of a large red onion, thinly chopped
½ yellow hot pepper, thinly chopped
2 mangos, peeled and thinly sliced
1 avocado, thinly sliced
½ juice of lemon
4 tbsp of sweet mango chutney
1 tsp of cilantro, very thinly chopped
5 oz. pre-washed mixed greens
1 tsp of sesame oil
salt and freshly ground pepper
Pan grill chicken breasts and
cut them into cubes. You can do it up to a day ahead of serving this
salad.
In a large bowl, combine chicken, grapes, red onion, hot pepper, mangos,
and avocado. Pour the lemon juice over the avocado, it will prevent it
from oxidizing and turning brown.
Add to the bowl mango chutney and cilantro, very gently combine all the
ingredients.
Place the greens on a serving platter and add the mango salad ingredients
in the center.
Drizzle sesame oil on the greens and voila, ready to eat. Delicious!
