Left-over Pasta with Shrimp

Left over dinners don’t have to be boring. I often have left over pasta and this is one of the ways I transform it. Shrimp with pasta is a great left over dinner and no one will know. Pick up some extra shrimp when you are shopping and throw it in the freezer. These days they are inexpensive but still have the feel of a luxury item and are always ready to transform a meal.

SERVES 4

INGREDIENTS

500 grams of shrimp, medium sized, de-veined and peeled
4  garlic cloves, minced
2  tbsp of Italian parsley chopped
¼ tsp of hot pepper flakes
1  tbsp of olive oil
½ of lemons juice (2 tbsp)
1  tbsp of olive oil
1  tbsp of butter
3  cups of Penne Rigate left over pasta
½ tbsp of bread crumbs
½ of lemons juice (2 tbsp)
    zest of a lemon
¼ cup Parmesan cheese, freshly grated
    salt and freshly ground pepper to taste

 

Add to a large bowl shrimp, garlic, parsley, hot pepper flakes, olive oil, lemon juice and season with salt and pepper to taste. Let it marinate for 30 minutes.

Add the olive oil and butter to a non stick pan. When hot add pasta to the pan and turn it down to medium-low. Let the pasta brown for 5-7 minutes, until it's a little crispy. Add the bread crumbs, and sauté for 2 minutes.

Simultaneous, to another large pan add the shrimp. Cook approximately 2 minutes per side or until pink.

To serve, place pasta on a plate, add the shrimp and sprinkle with lemon zest and juice. Enjoy!


TIP DU JOUR:
By adding one part olive oil and one part butter your food will take on the sweetness of butter but will not burn as easily if it was alone in the pan without olive oil.

The bread crumbs bring another layer of crunchiness but you can leave them.
