Left over dinners don’t have to be boring. I often have left over pasta and this is one of the ways I transform it. Shrimp with pasta is a great left over dinner and no one will know. Pick up some extra shrimp when you are shopping and throw it in the freezer. These days they are inexpensive but still have the feel of a luxury item and are always ready to transform a meal. SERVES 4
500 grams of shrimp, medium
sized, de-veined and peeled
Add to a large bowl
shrimp, garlic, parsley, hot pepper flakes, olive oil, lemon
juice and season with salt and pepper to taste. Let it marinate for 30
minutes. Simultaneous, to another large pan add the shrimp. Cook approximately 2 minutes per side or until pink. To serve, place pasta on a plate, add the shrimp and sprinkle with lemon zest and juice. Enjoy!
