Duck a l'Orange

Halibut is a delicious fish. If you and your family are just starting to incorporate more fish into your diet Halibut is the fish to try. Many people who don't like to eat fish love Halibut, the main reason is that it doesn't smell and taste too fishy. Halibut has firm white meat, its taste is mild and slightly sweet. Best of all, it is a lean fish with immense nutritional benefits! This is a great dinner idea, and it is very easy to make.

SERVES 2

INGREDIENTS

½ jalapeno pepper, seeded and thinly chopped
1  mango, cubed
2-3 apricots (depending on size), cubed
3  tbsp of red onion, thinly chopped
1  lemons zest
½ a juice of lemon
1  tbsp of honey
2  Halibut steaks (350 grams or 6 oz. each)
1  garlic clove, minced
1  tsp of olive oil
    salt and freshly ground black pepper

 

Place the jalapeno, mango, apricots and red onion together in a bowl.

In a separate bowl combine ½ the juice of a lemon, honey and a dash of salt and pepper. Pour this mixture over the mango mixture and very gently toss all ingredients together. You can make this ahead of time and place in the fridge for a few hours until ready to serve fish.

When ready to eat, rub the olive oil on both sides of the halibut steaks. Season it with a little bit of salt and pepper, zest of a lemon and minced garlic.

Place it on a medium-hot grill or a Teflon pan. Grill first side for approximately 7 minutes, the second side will take less time, approximately 5 minutes or until cooked through. The grilling time will depend on the thickness of steaks.

Take it off the heat. Spoon half of the chutney on each steak and enjoy! 

 

TIP DU JOUR:
If you don’t have fresh apricots, or they are out of season, use dried ones.

It is a perfectly good idea to make this apricot-mango chutney before dinner time, up to 6 hours. It will cut down on your dinner preparation in the evening and will help all the flavours come together!
