Ginger Spiced Burger - with Greens and Asian Dressing

 

INGREDIENTS FOR DRESSING

2  tbsp frozen orange juice concentrate
2  tbsp fresh ground ginger
2  tsp sesame oil
2  tbsp soya sauce light
2  tbsp seasoned rice vinegar
2  tbsp juice from the meat or water

 

 

  

A twist on a classic. A refreshing dinner idea for home or the cottage, its fast, easy and delicious. Serve on a bed of greens. Use your favorite salad mix and what ever fruits and vegetables are in season, or what you happen to have on hand. I think adding mango would be a great addition as well a few cilantro leaves to the salad mix or chop it and mix it in in the first step along with ginger.
Great meal idea, very satisfying and delicious!

SERVES 4

INGREDIENTS

2  lbs. extra lean ground pork or beef (1 Kg)
2  tbsp fresh ground ginger
2  tbsp sesame oil
2  tbsp soya sauce light
2  tbsp Banana chili sauce or any sweet chili sauce
     olive oil, to prevent sticking

4-6  cups leafy greens
1  cup wild blueberries
1  yellow pepper, sliced
4  green onions, sliced
1  mango, sliced into strips
 

In a large bowl combine the ground meat, ginger, sesame oil, soya sauce, and chili sauce. Keep it in the fridge for up to a day or cook immediately.

Make 4 equal sized patties.

Prior to placing on a medium-hot BBQ or a non-stick skillet, place on the hot surface a little amount of olive oil to prevent sticking. Cook 5-7 minutes per side, or until cooked all the way through. Only flip once.

For the dressing. Combine all the ingredients, and whisk them together.

Place greens on individual plates. Add fruit and vegetables to the greens. Drizzle dressing over the salad and finish by placing ginger spiced burger on top.
