Crunchy Orange Asparagus
This is
an excellent side dish, the flavours of orange and asparagus really go
well together. It is delicious and it complements wonderfully Duck a
l’Orange or brings to life a plain chicken breast.

INGREDIENTS
1
lbs. of asparagus, trimmed
2 tbsp of bread crumbs
2 tbsp of sweetened flaked coconut
2 tbsp of orange marmalade
¼ tsp of salt
1 tsp of butter
pinch of ground black pepper
Preheat
oven to 400 degrees F.
Steam asparagus for 7 minutes, sprinkle half of the salt on the
asparagus. Combine bread crumbs, coconut, orange marmalade, the rest of
the salt, and a pinch of ground black pepper.
Transfer the asparagus to a baking dish. Dress it up with the bread
crumb mixture and break butter into small pieces all over the crumbs.
Place it in the oven for 7-10 minutes or until the topping slightly
browns and becomes crunchy.
TIP DU JOUR:
Depending on the thickness of your asparagus the steaming time will
differ. Don’t over steam asparagus as it will further cook in the oven.
This amount will be sufficient for 4 people but I would divide it
between 2 because it is so good everyone will want more. |
