Chicken Legs with Chipotle Glaze

Chicken is often common on the dinner menu. However this recipe really transforms it from plain to spicy and delicious. The chicken tastes similarly to chicken wings but it is oven roasted not deep fried and the glaze is finger-licking good.

SERVES 4

INGREDIENTS

2  lbs. chicken legs
2  tsp olive oil
2  garlic cloves, minced
2  chipotle peppers in adobe sauce, finely chopped
2  tsp adobe sauce
4  tbsp apple cider vinegar
4  tbsp honey
2  tsp hoisin sauce
    salt and freshly ground black pepper
 

Preheat oven to 400°F and line a large glass baking dish with aluminum foil for easy clean up later.

Dry chicken legs, and season them with salt and pepper. Put them in a baking dish and place in the oven for about 1 hour or until cooked through.

To a small pot on low heat add olive oil and garlic. Sauté for 2 minutes. To the pot add chipotle peppers with adobe sauce, apple cider vinegar, honey, hoisin sauce and whisk it all together. Cook the glaze on low heat for 10-15 minutes or until it thickens.

Forty minutes in to baking, spread half of the glaze lightly on the chicken, and put chicken back in the oven.

Bring the glaze back to a gentle simmer for a few minutes. When ready, take the chicken out of the oven and spread the rest of the glaze over the legs and serve.
 

TIP DU JOUR:
If you enjoy spicy foods you may want to add more chipotle peppers, but be careful this glaze can quickly turn very spicy.

Try doubling the glaze recipe, keep it in the fridge and use it in the next few days on chicken breasts.

To make this dish leaner. Remove the skin of the meat and any fat that may be visible . A lot of fat is deposited right under the skin. This step will definitely contribute to reducing your daily fat intake.
