Blue Cheese ~ Plum Butter Pizza

This is not an ordinary pizza, but the result is amazing. Try it, and surprise your family or friends. I love the contrast in this recipe between the sweet, the sour, the crunch and the smelly. This is a fun and delicious appetizer.

SERVES 4-6

INGREDIENTS

1  pckg. of pizza dough
2  tbsp bread crumbs
2  tbsp of plum butter
2  chicken breasts, grilled with salt and pepper
2  oz. blue cheese (50 grams)
¼ cup cherries, pitted from a can or jar
¼ cup pecans, toasted
¼ cup Pecorino Romano
 

Preheat oven to 350°F. For that crunchy and rustic pizza dough spread the bread crumbs all over the pizza baking dish.

Gently stretch the dough over the pizza dish, about a 13 inch round. With a back of a spoon spread the plum butter over the entire pizza leaving the edge clean.

Arrange chicken on the dough, crumble your favorite blue cheese, top with cherries, pecans and Pecorino Romano.

Bake in the oven for 16-20 minutes or until the edge of the crust is golden. Cut, serve and enjoy. Combine all the ingredients in a large bowl, add enough of the dressing to cover lightly all the ingredients and serve!!
 

TIP DU JOUR:
Plum butter is a fruit spread made from stewing plums with some sugar and spices, its consistency is very smooth and thick, similar to regular butter. You can purchase it in most specialty food stores or large supermarkets. If it is too thick heat it in the microwave for 20 seconds, then it will be much easier to spread. Also if it is too sweet for your taste, add a little bit of chicken stock (1 tsp to 1 tbsp) to modify the taste characteristics.
