Black Bean Spread

This is a great appetizer, and you can feel good about serving it to your family and friends. There is no added fat, just lots of protein and everyone will be happy to have guilt free and a delicious snack. I like to serve it along with whole wheat, spinach and other types of flatbreads.

SERVES 6-8

INGREDIENTS

1 cup black beans, drained and rinsed
1 garlic clove, minced
1 lime, zest and juice
salt and freshly ground pepper
 

Drain and rinse beans and put in a large bowl. Add garlic, zest of a lime and juice, as well a pinch of salt and pepper. With the back of your fork mash everything together.

Serve with toasted flat bread and a use a butter knife to spread.

TIP DU JOUR:
To make this spread I like to mash all the ingredients with the back of a fork because I like to still see the ingredients, and it is easy as the beans are already cooked and soft. Of course you can use food processor but be cautious not to over blend it to a paste.

This is a fun recipe, if you like lime add more if you don’t add less. Taste and add as little or as much of the ingredients as you like.
