Asparagus with Tomato and Feta
This is
a delicious side dish, and it only takes minutes to put together. The
tomato mixture can be prepared a day a head.

INGREDIENTS
2
tomatoes, large and sweet, de-seeded
1 shallots, minced
1 garlic clove, minced
1 tbs lemon juice
500 grams asparagus, steamed (1 lb)
4 basil leaves, sliced into thin strips
50 grams feta cheese (2 oz)
salt and freshly ground pepper
Place
tomatoes into a bowl, add shallot, garlic, lemon juice and salt and
pepper. Mix everything together. Keep it for up to a day in the fridge
before serving.
Steam asparagus for 2 minutes. Immediately immerse in ice cold water to
stop cooking processes. This step also maintains that nice vivid green
colour.
Serve asparagus on individual plates, spoon tomato mixture on top,
crumble feta cheese and sprinkle basil leaves. Enjoy!!
TIP DU JOUR:
If you are in a rush or you can’t find good and sweet tomatoes, buy a
good quality fresh salsa and skip one step in making this dish. To
modify it, use blue cheese instead of feta.
Also try
sprinkling fresh oregano instead of basil.
