Asparagus with Tomato & Feta Cheese

 

Asparagus Information Page

This is a delicious side dish, and it only takes minutes to put together. The tomato mixture can be prepared a day a head.

SERVES 4

INGREDIENTS

2  tomatoes, large and sweet, de-seeded and cut into cubes
1  shallot, minced
1  garlic clove, minced
1  tbs lemon juice
500 grams asparagus, bottom 1½ inch trimmed (1 lb)
50 grams feta cheese (2 oz)
4  basil leaves, sliced into thin strips
    salt and freshly ground pepper

 

Place tomatoes into a bowl, add shallot, garlic, lemon juice and salt and pepper. Mix everything together. Keep it for up to a day in the fridge before serving.

Steam asparagus for 2 minutes. Immediately immerse in ice cold water to stop cooking processes. This step also maintains that nice vivid green colour. 

Serve asparagus on individual plates, spoon tomato mixture on top, crumble feta cheese and sprinkle basil leaves. Enjoy!!
