Asparagus

Asparagus is a vegetable native to the Eastern Mediterranean area and is a member of the lily family. There are several edible varieties of asparagus and they all are known for their delectable qualities. The most common variety is green, less common is white and even less common is purple. The white asparagus has a little milder flavour than the green and it is white because it is grown underground to prevent development of chlorophyll. The purple variety, it has been said, is slightly sweeter than the other two.

When purchasing asparagus look for firm stems and tight tips that are also firm and smooth. To store asparagus, stand it at the bottom of the fridge in a little container with water or wrap the end with a moist paper towel to maintain their succulence.

Asparagus as compared to other vegetables is relatively high in Folate. Hence it is a good vegetable to have often if one is planning to get pregnant or is already pregnant. Studies show that Folate is necessary for a fetus to develop a healthy nervous system and prevent such birth defects as spina bifida. Canada Food Guide and Health Canada state that in 5 spears boiled and
drained there is 110 μg of Folate and in 5 spears from a can there is 86 μg of Folate.
